Make your own, CHILI

The ingredient:
Dried chile, I just used what I could get from store , chile new mexico.
it is often recommended chile ancho.

Garlic---( 6 cloves match with 6 dried chile)

Cumin---(2 tsp) magical spice, bring up all the flavors Coriander--(1tsp) it is actually cilantro, I think the ground coriander comes from coriander seed, so kinda more intense than dried cilantro leaves. (cilantro is Mexican tag ingredient too :p


Oregno--(1/2tsp) I haven't figure out why it should be here, just remember


Cinnamon--(1/2tsp) Homework too,


Allspice--(1/2tsp) I think it is optional


1. soak chile in boiled water( 3-4 hrs), or boil it on stove top. Make sure it becomes tender, remove seeds and stems

2. put all the ingredients in the food processor, add water that soak chile ( about 1/4 cup or so) if too thick


Now you can see. It is RED, lovely RED,( my cute white bowl got stains :( )

Last time, I made it for Beef chuck chili, which was complemented by Special K as the best chili he ever had. ( He probably forgets he has said that, but I remember :) This time, I am going to use it for marinade my chicken and after overnight. I believe it will be wonderful

Avocado, dried cranberries, sweet corns, pine nuts,spring green salad with wasabi seasame dressing (Trader joe's)

Kick off , every exciting!
I always believe how much care you give to food when cooking , how much taste it gives back to you. The most delicious food can come from everyone, as long as you cook with care, and love...

Iron Chef Special K encourages not measuring, so I will try to follow my intuition.
Very simple, all the ingredients are listed: Avocado, dried cranberries, pine nuts, sweet corns, mix spring greens

Dressing : Wasabi seasame from trader joe's. Notes:

1. pine nuts + sweet corns are classic combination, kinda universal in salad. of couse pine nuts can be subtituited by other kinds of nuts, like almonds?

but pine nuts are Speical K's first choice, and sweet corns here are the sweetest corn in the world -- trader joe's organic super sweet corns!

2. Wasabi dressing, very impressive, and surprisely appreciated by Special K. I guess mostly because wasabi is very similar to horseradish, which is also K ingredient :)

3. So wasabi+avocado come out to be another classic combination, sushi! It is always correct to use spicy flavor with avocado. So sushi lovers can also add sashimi or smoke salmon?

Aha, if use smoke salmon, I think the herb mix green , which often has dill in it:), will impress you more.
