Make risotto for the people you love

Making risotto is a very time-consuming work, and if you want to make good risotto , you have to stand beside the stove watching your risotto and stirring all the time, adding chicken broth frequently at the right time, it will take about half an hour.  I don't make risotto very often, especially avoid it in the dinner party.
So if someone make risotto for you, you should realize that is the way he or she loves you. And the risotto cake means 'my love doesn't have leftover, always fresh guaranteed !' 

I have made risotto many times, but didn't get any chance to make risotto cake because of no leftover. This 'precious' leftover I got from last dinner with Elaine made me so happy, and I could make risotto cake!

Risotto cake:
leftover risotto
panko bread crumbs
any kinds of herbs you like ( I add basil)
some prosciutto or pine nut( optional)
washed egg( for this much risotto, I only used 1/3 egg)
1-Mix them together, gradually add bread crumbs and check the texture until it can form a ball, then press it to make patty
2-Brush the patty with washed egg, then put the patty in the panko bread crumbs
3-pan fried it until golden , then put it into 350F oven bake 5-10 min per side, check every 3min, (the time depends on the size of the cake, if the cake is very thin,there is no need to bake)

Red pepper aioli
Medium Red pepper: roasted, and peeled
garlic paste made from 2 clove garlic : making paste hop garlic with salt , chop( about 5min), then you will get garlic paste
1/4-1/3cup Mayo
lemon juice: 1 tablespoon 
Put them in to a food processor , blend until smooth
garlic paste

Zucchini angles hair  pasta salad
*I was going to make zucchini spaghetti, but my grate can only make angles hair but not spaghetti : P
Julienned zucchini
olive oil( or garlic oil:  roast garlic in olive oil, then you get garlic oil)
garlic powder( I was lazy)
white pepper
salt
a little bit lemon juice
